In recent years, pistachios have gained space on social media and in Brazilian kitchens, winning over food lovers with sweet and savory recipes. In addition to its characteristic flavor, the oilseed also offers health benefits, as it is a source of good fats, fiber, proteins, vitamins and minerals.
According to Michel Silva, coordinator of the Gastronomy course at Faculdade Anhanguera, the pistachio It can be part of a balanced diet when consumed in moderation. “In addition to being quite versatile, the ingredient has important nutrients and can be used in various preparations, from desserts to sauces and more elaborate dishes”, he explains.

1. Pistachio brigadeiro
Ingredients
- 395 g the condensed milk
- 200 g of cream
- 100 g shelled pistachios, unsalted and crushed
- 1 tablespoon of butter
- Crushed pistachios for garnish
Preparation mode
In a pan, mix the condensed milk, cream, butter and 100 g of pistachios. Cook over low heat, stirring constantly, until the mixture no longer sticks to the bottom of the pan. Let it cool. Using your hands, roll the brigadeiros and finish with the crushed pistachios. Serve then.
2. Cheesecake the pistachio
Ingredients
Base
- 200 g crushed cornstarch biscuit
- 100 g melted butter
Filling
- 300 g de cream cheese
- 200 g the milk cream
- 100 g crushed pistachio
- 1/2 cup of sugar
Preparation mode
Base
In a bowl, mix the cornstarch biscuits with the butter. With the dough, line the bottom and sides of a mold with a removable bottom. Book.
Filling
In a bowl, beat the cream cheese, cream, pistachios and sugar until smooth and pour over the base. Refrigerate for at least 4 hours. Serve then.

- 200 g the chocolate semi-sweet
- 100 g of butter
- 2 eggs
- 1 cup of sugar
- 1/2 cup of wheat flour
- 100 g chopped pistachio
- Butter for greasing
- Wheat flour for flouring
Preparation mode
In a bowl, melt the chocolate in the microwave in 30 second intervals. Afterwards, mix with the butter and set aside. In a bowl, mix the eggs with the sugar. Gradually add the wheat flour and then the melted chocolate. Mix until smooth. Add the pistachios and mix well. Grease a baking tray with butter and flour with wheat flour. Pour the dough and bake in a preheated oven at 180°C for 30 minutes. Turn off the oven, wait for it to cool and then serve.

According to Michel Silva, the ingredient can be incorporated into different preparations and combinations. “Pistachio pairs well with chocolate, fruits citrus fruits, cream and even savory dishes. The important thing is to explore the possibilities and take advantage of the remarkable flavor of the oilseed”, he concludes.
