1. Crispy pork rinds
Ingredients
- 1 kg of belly pork with skin and cut into cubes
- 1 tablespoon of salt
- 1 teaspoon ground black pepper
- 2 cloves of garlic, chopped
- 1 tablespoon lemon juice
- 200 ml of water
Preparation mode
In a bowl, season the pork belly with salt, black pepper, garlic and lemon. Mix well and let it rest for 30 minutes. Transfer the meat to a deep pan and partially cover with water. Cook over medium heat until the water evaporates completely and the fat begins to melt.
When the water dries, lower the heat and let the cubes fry in their own fat, stirring occasionally to brown evenly. Increase the heat in the final minutes to crisp the skin and make the crackling very crispy. Remove with a slotted spoon and drain on paper towel. Serve then.
Ingredients
- 3 cups of cooked rice
- 1 ovo
- 1 cup of wheat flour
- 1/2 cup grated parmesan cheese
- 1/2 cup of sausage pepperoni chopped
- Salt and ground black pepper to taste
- Oil for greasing
Preparation mode
In a container, place the rice, egg, wheat flour and Parmesan cheese and stir until a homogeneous consistency is obtained. Season with salt and black pepper. Then, using a spoon, take some dough, open it in the palm of your hand and fill it with pepperoni. Shape into a ball and repeat the process with the entire dough. Grease a baking tray with olive oil and place the dumplings on top. Place in the preheated oven at medium temperature for 15 minutes. Serve then.
3. Pølse i lefse (Norwegian hot dog)
Ingredients
Massa
- 2 potatoes cooked and mashed medium
- 1 tablespoon of butter
- 1/2 teaspoon salt
- 1 cup of wheat flour
- Wheat flour for flouring
Assembly
- 4 hot dog sausages
- 4 tablespoons crispy onion
- 4 teaspoons mustard
- 4 teaspoons of ketchup
- 1 l of boiling water

In a bowl, mix the mashed potatoes, butter and salt. Add the wheat flour little by little, mixing until you get a soft dough that doesn’t stick to your hands. Divide the dough into four portions. On a surface floured with wheat flour, roll out each one with a rolling pin until it forms thin discs. Heat a frying pan over medium heat and cook the discs for about 2 minutes on each side, or until golden. Book.
Assembly
Heat the sausages in a pan of boiling water for about 5 minutes and then drain. Spread the mustard and ketchup over each dough. Place a sausage in the center, distribute the crispy onion on top and wrap the dough around the sausage. Serve then.
4. Prawns with meatloaf
Ingredients
- 500 g the Cameroon cleaned, cooked and peeled
- 1 sliced baguette
- 1/2 cup mayonnaise
- 1 lemon cut into wedges
- Ice and fresh dill to taste
Preparation mode
On a platter, place the shrimp with ice to keep them cold until ready to serve. Place the slices of bread in a basket or plate and place the mayonnaise, lemon wedges and dill next to them. To assemble, spread a layer of mayonnaise on a slice of bread, add a portion of the prawns and finish with a few drops of lemon and fresh dill. Serve immediately.
