Preparation mode
Massa
In a bowl, mix the flour with the salt. Add the cold butter and mix with your fingertips until it forms a moist crumb. Add the egg, yogurt and, if necessary, a little ice water. Form a homogeneous dough, wrap it in plastic wrap and refrigerate for 30 minutes.
Filling
In a pan, heat the oil over medium heat and sauté the onion and garlic. Add the chicken, peas and seasonings. Cook for about 5 minutes and set aside.
Protein cream
In a bowl, mix the cottage cheese, ricotta, Greek yogurt and nutmeg until you get a smooth cream. Incorporate this cream into the chicken filling, forming a very creamy filling.
Assembly
Roll out about two-thirds of the dough with a rolling pin and line a mold approximately 24 cm in diameter. Distribute all the filling. Roll out the rest of the dough and cover the pie. Seal the edges well, make small cuts on the surface to release the steam and brush with the egg yolk. Bake in a preheated oven at 180°C for 45 to 55 minutes, or until the dough is golden and crispy. Let it rest for about 15 minutes before cutting. Serve then.
